I think Mosaic Cowl is the most versatile pattern from my book, also available as an individual pattern here. It's a really simple knit: 6-stitch pattern repeat, every round. The color changes are just 4-row stripes, but the bias rib pattern makes the stripes form little diamonds that resemble entrelac.
This is the book and pattern version worked in Purl Soho Worsted Twist
This version is slightly smaller for a kit using Imperial Ranch Columbia.
A smaller version again available as a Knitcrate kit using Big Bad Wool Weepaca.
And finally the original pattern using Anzula For Better or Worsted.
